This soup is very easy to make and can be stored in the refrigerator. The ingredients and preparation are listed below so you can try this recipe out yourself.

Radical oxygen is a byproduct of ultraviolet rays, radiation, chemical substances, food additives, preservatives and smoking. Radical Oxygen promotes sickness and aging by attacking cells and genes in our body. Unfortunately, we cannot prevent exposure to radical oxygen in our daily lives.

We cannot get enough phytochemicals by eating raw vegetables because chewing or cutting raw vegetables are not suitable methods for penetrating the cellulose walls.

Vegetable soup is an ideal way of obtaining the phytochemicals our bodies need. Heat is required to release phytochemicals from cells which can be consumed efficiently by eating vegetable soup.

Dr. Maeda’s Default Recipe:

Cabbage, Carrot, Onion and Kabocha (Japanese pumpkin-squash).

Recommendations
– Use locally sourced, seasonal vegetables as much as possible
– Use leaves and roots too
– Add tomatoes and celery for a variation on the original recipe

Serving Size 4-6 Servings

Ingredients:
1 Quart Water
1 Head of Cabbage
1 Large Carrot
1 Medium Onion
1/2 Kabocha Squash (Substitute another squash if Kabocha is unavailable)

Preparing Dr. Maeda’s Strongest Vegetable Soup

Cut/Chop Vegetables
Pour 1 Quart of Water into a Stock Pot
Put chopped vegetables in a Stock Pot with Water and Heat at Medium

Watch progress and just before boiling… turn heat to Simmer
Simmer for additional 30-minutes

Seasonings: black pepper, soy sauce, miso
